Chicken Marsala! Its my favorite dish to make and you'll impress anyone with it.

I almost double the marsala that the recipe calls for. Its delicious and not difficult! After you've taken the chicken out of the marsala sauce, I recommend using a little bit of flour (I use wheat, but whatever your preference is!) to thicken up the sauce a little bit. Then pour it on top!
One of my favorites is to saute the mushrooms in 2 tbs of butter, add some heavy whipping cream, and dijon mustard (to taste). Simmer over Med heat until it slightly thickens. You can either use it to top pan seared chicken breasts, or cut the chicken into chunks and wrap the chicken, mushroom sauce, and some cheese in Pillsbury recipe creations (cut to size), and bake at 350 for about 20 min. Even my 3yr old daughter loves to make and eat it! :)
My most common use is a pasta alfredo. Just saute the mushrooms in butter with some garlic. Add a jar of Classico roasted garlic alfredo. Then add a splash of cream or half and half, whatever you have. And a handful of shredded Parmesan. Toss with about 8-12 oz. of cooked pasta.
One of my favorites: saute in a little butter and a chopped garlic clove, add a splash of worchestershire a splash or maybe two of red wine. A little chopped onion ( green if you have them), cook until tender. Great!
Saute the mushrooms in butter. Set aside.

Bake or grill chicken breasts until the juices run clear. Add mushrooms, a piece of cooked bacon, and a slice of provolone cheese to the top of each chicken breast. Return to oven and allow the cheese to melt.
you could easily make a pasta sauce (like alfredo) and add the mushrooms to it. I really like fresh mushrooms in my salad.
