What is a simple rice recipe from India?

I have a friend visitng from India, and promised to make a traditional dinner for him. I don't have a clue where to start... any suggestions? Will be inlcluding a kind of meat dish ifI can find one.What is a simple rice recipe from India?

You can make a salad/raita and buy naans at an Indian store. You can also buy the paneer and tandoori paste/powder at any Indian store or large supermarket.

CURD RICE RECIPE





1 Cup Boiled Rice


2 cups of plain yogurt (Curd)


2 Tbsp Oil


1/4 cup milk


Finely chopped coriander leaves


1-2 green chilies


1 tsp. chana daal


1 tsp. urad daal


1 tsp. mustard seeds


1 1/2 tsp. finely chopped ginger


2 Tbsp desiccated coconut


1/2 tsp. salt





How to make curd rice:





In a saucepan heat 2 tablespoonful of oil.


Add mustard seeds to the oil.


When the mustard seeds start popping add chana and urad daal.


After a minute, add in the ginger, coriander and green chilies.


Saut茅 them for a minute.


Take the pan off the gas. Add in the rice.


Mix the salt and desiccated coconut.


Just before serving, mix all the ingredients with yogurt (curd) and milk. Curd rice is ready to be served.





EAST INDIAN BEEF CURRY





2 lbs. lean beef, cubed


1/4 c. flour


3 tbsp. oil


1 chopped raw onion


2 tsp. salt


1/4 tsp. dry mustard


4 tbsp. curry powder


1 tsp. sugar


1 c. water


2 tbsp. lemon juice, preferably fresh


2 tbsp. grated or flaked coconut


1 tart apple, peeled and chopped


1 tomato, peeled and chopped


3 tbsp. seedless raisins


Dash of nutmeg





Dredge meat in flour and brown on all sides in hot oil. Add onions to skillet, saute a few minutes but do not brown. Add remaining ingredients and mix well. For a mild curry, decrease amount of curry powder used. For a hot curry, increase the amount. Cover.


Simmer for 45 minutes or until the meat is tender. Serve with rice and an assortment of condiments. Serves 4.





MIXED VEGETABLE SALAD RECIPE





50gms French beans


3-4 carrots


1 small cabbage


100gms Broccoli (cut into florets)


1 Capsicum


salt to taste


1 Tomato (cut into thin rings)


2 green chilies(slit vertically)


Finely Chopped coriander leaves


1 lemon juice


Black pepper powder to taste





Preparation:


Cut and Steam the vegetables.


Add tomatoes, green chilies salt, pepper powder and lemon juice, and mix well.


Garnish with coriander leaves.





Shrikhand


Ingredients: Servings 4 to 6


1 quart whole milk yogurt


1/3 cup powdered sugar


1/3 tsp. cardamom powder


few strands saffron


1/2 tbsp. pista %26amp; almond crushed


Method:


Tie yogurt in a clean muslin cloth overnight. (6-7 hours).


Put the yogurt into a bowl, add sugar and cardamom and mix.


Rub saffron into 1 tbsp. hot milk, in a small bowl, until the color spreads and dissolved and add to the yogurt


Empty into a serving bowl, and garnish with nut crush.


Chill for 1-2 hours before serving

1 servings





1/3 cup peeled and sliced/chopped cucumbers


1/3 cup boiled diced potatoes (You can use leftover boiled potatoes)


1/3 cup chopped tomatoes


2-4 tablespoons chilled plain yogurt (You can use low/non-fat varieties)


1/8 teaspoon chat masala (use it for authenticity; available in Indian stores) (optional)

1. Toss everything well in a serving bowl.


2. Grab a fork or large spoon and eat immediately, or refrigerate until hunger strikes, and then eat!


3. Feel extremely pleased with yourself that you snacked on this instead of that bag of chips you were eyeing.


4. Proceed to eat several helpings of dessert after dinner as reward.

BRIYANI RICE





鈥?300g Basmati rice


鈥?1/4 tsp turmeric powder


鈥?4 tbsp margarine


鈥?250ml plain yoghurt


鈥?1 tsp salt


鈥?900g chicken, chopped into large pieces


鈥?80ml cooking oil


鈥?2 tbsp ghee


鈥?5cm cinnamon stick, lightly smashed to break up

鈥?4 slices ginger


鈥?10 shallots, thinly sliced


鈥?3/4 tsp turmeric powder


鈥?1 tsp coriander powder





(B)


鈥?5 cloves garlic


鈥?1 star anise


鈥?5 cardamoms, lightly smashed


鈥?1 tsp ground fenneL


鈥?1 tsp poppy seeds





GARNISHING


鈥?10鈥?5 cashew nuts, deep-fried


鈥?50g raisins


鈥?1鈥? tbsp shallots crisps





鈥?Wash and soak Basmati rice in water mixed with turmeric powder for 30鈥?5 minutes.


鈥?Drain rice in a colander. Heat margarine and fry ingredients (A) until fragrant.


鈥?Add 2 tablespoons yoghurt and 1/2 teaspoon salt.


鈥?Mix in (B) and chicken.


鈥?Fry well, then add in another 2 tablespoons yoghurt and remaining salt.


鈥?Continue to fry until chicken is tender.


鈥?Leave aside. Heat oil and ghee in a clean wok.


鈥?Put in cinnamon stick and fry until fragrant.


鈥?Add the remaining yoghurt to mix.


鈥?Toss in rice to mix, then transfer the well-mixed ingredients into a rice cooker.


鈥?Add sufficient water to a level that is 2cm above the rice.


鈥?Cook rice for 20 minutes.


鈥?Then add in the precooked chicken and continue to cook until rice is done.


鈥?Add garnishing before serving.
