I've got a boatload of E.Guittard baking chocolate, (white, dark, semisweet, milk), and I don't know what to do with it. But...I'm broke till next payday, so I'm trying to find stuff to make in the meantime with ingredients that I have on hand. I've got most of the essential baking ingredients, (flour, sugars, etc.), pecans, vanilla ice cream...
I'm just not in the mood to sift (!) through online recipe sites. Any ideas?Do you have any good [somewhat simple] chocolate recipes?
This is an easy recipe, the amount doesn't really matter in this recipe, guesstimating is totally o.k. You can use semi-sweet chocolate chips - 1 cup or 1 cup white chocolate chips for a sweeter flavor if you have a really sweet tooth, melt that on a double boiler or in the microwave 15 sec. at a time. When melted let cool for 10 min. While cooling set the temp. on the oven to about 150-200 degrees fahrenheit and toast nuts (optional) and 1/2 cup coconut on a baking sheet two min. at a time until the nuts are slightly roasted and the coconut is slightly crunchy. Then pour nuts and coconut flakes into the melted chocolate and form into balls. Place on a lined cookie sheet and then into the fridge until cool and firm. Then enjoy! These are really good and soooo easy! Makes about 10 balls in a batch, so double up if you have company!
EDIT: couldn't believe nobody had any other recipes so here are a few others that I use that are really good!
Chocolate Oatmeal Cookies a.k.a -No Bake Cookies
1 stick of butter
2cups of sugar
3 tablespoons of cocoa
1/2 cup of milk
3 cups of oatmeal
Boil butter, sugar, cocoa, and milk for one minute. Then turn off the flame and add oatmeal. Mix well. Let cool for about 10-15 min. and then drop onto baking sheet covered with waxpaper. Chill in the fridge until hard. Peel off and enjoy!

Sugar Cookies
2 cups sugar
2 1/2 Cups all-purpose flour
1/2 tsp. baking powder
1/2 tsp. salt
14 tablespoons unsalted butter, softened
2 tsp. vanilla extract
2 large eggs
1.) Adjust an oven rack to the middle position and heat the oven to 350 degree. Spread the 1/2 cup of the sugar in a shallow dish for coating and set aside. In a separate bowl, whisk the flour, baking powder, and salt together and set aside.
2.) Beat the butter and remaining 1 1/2 cups sugar together in a large bowl using an electric mixer on med. speed until light and fluffy, 3-6 min. Beat in the vanilla, then add in the egges, one at a time, until combined, about 30 sec. scraping down the bowl and beaters as needed.
3.) Reduce the mixer speed to low and slowly mix in the flour mixture until combined, about 30 sec. Give the dough a final stir with a rubber spatula to make sure it it combined.
4.) Use wet hands to roll 2 tablespoons of dough at a time into balls, then roll in the sugar to coat. Lay the balls on two parchment-lined baking sheets, spaced about 2 inches apart. Flatten the cookies with the buttered bottom of a drinking glass, then sprinkle any of the remaining sugar over the flattened tops. Bake the cookies, one sheet at a time, until the edges are set and just beginning to brown but the centers are still soft and puffy, 10-12 min.
5.) Let the cookies cool on the baking sheet for 10 min., then serve warm or transfer to a wire rack and let cool completely.Do you have any good [somewhat simple] chocolate recipes?
When I have bits of yummy stuff but not necessarily enough for my usual recipes, I make what I call ';Dump Cookies.'; It's essentially a basic chocolate chip cookie dough with the aforementioned yummy bits thrown in.
Here's my dough recipe: (I like the dough as much as the chocolate)
5 cups flour
2 tsp baking soda
2 tsp salt
4 sticks butter or margarine
1 1/2 cups brown sugar
1 1/2 cups granulated sugar
4 eggs
2 tsp vanilla
1 tsp water.
Combine flour, baking soda, and salt.
Cream butter and sugars until fluffy.
Add eggs, vanilla and water.
Gradually mix in flour mixture.
Then, stir in chopped up chocolate/nuts/coconut into the dough.
If you like thick cookies refrigerate it for an hour or three.
Bake at 350 for about 10-12 minutes or until the edges are golden.

Poor Man's Lasagna
2 packages macaroni %26amp; cheese dinners
8 oz package of cream cheese, softened
1 lb lean ground beef
1 medium onion, chopped
1 can (14.5 oz) tomato sauce
1 tsp. Italian seasoning
½ tsp. garlic powder
Cooking spray
1. Preheat oven to 375 degrees F. and lightly coat a 9 x 13-inch baking pan with cooking spray.
2. Prepare macaroni and cheese dinners as directed on package.
3. Meanwhile, brown meat in a large skillet over medium heat.
4. Add onions to meat and sauté until onions are tender but not browned; drain well.
5. Evenly spread prepared macaroni and cheese in the bottom of pan.
6. Layer cream cheese evenly on top of macaroni and cheese.
7. Mix tomato sauce with cooked ground beef and onions.
8. Layer meat mixture on top of cream cheese and sprinkle with seasoning.
9. Cover with aluminum foil and bake for 30 minutes.
Makes 4 to 6 servings
Mama's Hershey's Chocolate Cake
2 cups sugar
1-3/4 cups all-purpose flour
3/4 cup Hershey's cocoa
1-1/2 tsp. baking powder
1-1/2 tsp. baking soda
1 tsp. salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 tsp. vanilla extract
1 cup boiling water
Cooking spray
1. Preheat oven to 350 degrees F. and lightly coat two 9'; cake pans with cooking spray.
2. Combine flour, sugar, baking powder, baking soda, salt and cocoa in a large bowl using a fork or wire whisk to stir.
3. Add eggs, milk, oil and vanilla extract to flour mixture.
4. Beat on medium speed for 2 minutes.
5. Stir in boiling water (batter will be thin) and pour into prepared pans.
6. Bake for 30 to 35 minutes or until toothpick inserted in the center comes out clean.
7. Cool for 10 minutes in pans before turning out onto a wire rack to cool completely.
8. Frost when cake is completely cooled and serve.
Mama's Hershey Chocolate Frosting
1/2 cup butter or margarine
2/3 cup Hershey's Cocoa
3 cups powdered sugar
1/3 cup milk
1 tsp. vanilla extract
1. Melt butter in a large bowl and stir in cocoa.
2. Alternately add powdered sugar and milk, while beating on medium speed to spreading consistency.
3. Add more milk if necessary.
4. Stir in vanilla extract and frost cooled cake.
Makes about 2 cups
Evar's Chocolate Pie
2 cups white sugar
5 Tbsp. unsweetened cocoa powder
¼ cup all-purpose flour
1 can (12 oz.) evaporated milk
4 egg yolks (reserving egg whites)
¼ cup of butter or margarine
1 tsp. vanilla extract
9-inch single pie crust, unbaked
1. Preheat oven to 350 degrees.
2. In a saucepan, whisk together sugar, cocoa and flour.
3. Blend in evaporated milk and vanilla extract.
4. Beat egg yolks and stir into pan.
5. Add butter and heat; stirring constantly just until butter is melted.
6. Pour filling into unbaked pie shell.
7. Bake for 35 to 40 minutes or until pie is not “wobbly” when shaken.
Meringue
4 egg whites
¼ cup white sugar
1. Beat egg whites with a mixer until soft peaks form.
2. Gradually add sugar, beating constantly until stiff peaks form.
3. Spread meringue on top of pie.
4. Return pie to oven and bake until meringue is golden brown.
5. Let cool for several hours before serving.
Note: Egg whites should be at room temperature before making meringue.
S'More Delight
1 box of graham crackers, crushed
1 small can of chocolate syrup
1 large jar of marshmallow cream
1 pkg. semi-sweet chocolate chips
1 cup frozen whipped topping, thawed
2 Tbsp. chopped nuts
1. Crush graham crackers in a blender or place in a plastic bag and use a rolling pin.
2. Place half of the graham cracker crumbs in the bottom of a large bowl.
3. Spread half of the marshmallow cream over crumbs.
4. Sprinkle half of package of chocolate chips over top of marshmallow cream.
5. Drizzle half of can of chocolate syrup over top of chocolate chips.
6. Repeat layers with remaining ingredients.
7. Top with whipped topping
8. Sprinkle with nuts.
Hello Dolly Bars
1 ½ cups graham cracker crumbs
2 Tbsp. butter or margarine, melted
1 Tbsp. water
1/3 cup semi-sweet chocolate chips
1/3 cup butterscotch morsels
2/3 cup flaked coconut
¼ cup chopped nuts
1 can (14 oz.) sweetened condensed milk
Cooking spray
1. Preheat oven to 350 degrees F. and lightly coat a 9'; square baking pan with cooking spray.
2. Place graham crackers (about 9 sheets) into a blender on medium speed to make crumbs.
3. Combine graham cracker crumbs with butter and water in a bowl; toss mixture with a fork until moistened.
4. Gently pat mixture into the bottom of prepared pan; do not press firmly.
5. Evenly distribute chocolate and butterscotch chips over crumb mixture.
6. Sprinkle coconut flakes and nuts over top of chips.
7. Drizzle canned milk evenly over all.
8. Bake for 25 minutes or until lightly brown and bubbly around edges.
9. Cook in pan completely before cutting into squares.
