Coconut and Rum Ice Cream
1 Cup (237ml) Sugar
5 Egg Yolks
3/4 Cups (175ml) Cream
3/4 Cups (175ml) Coconut milk
3/4 Cups (175ml) Desiccated (dried and shredded) coconut
1 1/8 Cups(266ml) Milk
4 tbs. (65ml) Malibu Rum
1 tbs. (15ml) Lemon Juice
Yield: 6 Servings
What to do:
1. Beat the sugar and egg yolks together until thick and pale yellow.
2. Bring the milk to a simmer.
3. Beat the milk into the eggs and sugar in a slow stream.
4. Pour the mixture back into pan and place over low heat. Add the coconut milk.
5. Stir until the custard thickens slightly (around 70C). Use a thermometer, as at 75C the eggs will scramble!
6. Refrigerate over night.
7. Toast the desiccated coconut over medium heat in a dry saucepan, stirring all the time, until they turn a golden colour. Allow to cool.
8. Stir the toasted coconut, rum and the lemon into the refrigerated custard.
9. Whip the cream and gently fold in the custard.
10. Freeze using a domestic ice cream machine, or cover and place in the freezer.Do you have a Coconut Rum FOOD or DESERT recipe, something simple for a very large BBQ (2000ppl)?
check out Paula Deen on Food Network, the other day on her show she made fried coconut shrimp. Looked really good. I imagine the recipe is on the site. I would think you could marinate the shrimp in the rum then use the coating that Paula Deen made, the coconut. Sounds really good to me.
Edit: What about rum balls? You could add coconut to them. Or Rum Cakes with coconut added, with a chocolate/rum drizzled icing or sauce....

EDIT- BBQ SAUCE:
This recipe may work well with coconut rum, maybe just leave out some of the brown sugar:
INGREDIENTS
1 cup brown sugar
1/2 cup chile sauce
1/2 cup rum
1/4 cup soy sauce
1/4 cup ketchup
1/4 cup Worcestershire sauce
2 cloves garlic, crushed
1 teaspoon ground dry mustard
ground black pepper to taste
DIRECTIONS
In a saucepan over low heat, mix the brown sugar, chile sauce, rum, soy sauce, ketchup, Worcestershire sauce, garlic, dry mustard, and pepper. Simmer 30 minutes, stirring occasionally. Cool, and refrigerate until ready to use.
Wow, you are funny!!! shrimp to expensive, catch them on special that way you do not expend that much money. You can make white rice with coconut milk and that will accompany the shrimp you are going to cook.
