hi. im looking for a simple tiramisu recipe. it would be really helpful if there are filipinos here who answer. im having a hard time following other recipes because some ingredients are not readily available here.

Tiramisu
Serves 8
8 ounces (250gr) chocolate semi-sweet - cold - grated
4 egg yolks
1 cup (250ml) sugar
1 1/2 teaspoons (7ml) vanilla
8 ounces (250gr) cream cheese room temperature
1 3/4 cups (450ml) cream 35%
1 tablespoon (15ml) espresso coffee instant
1 cup (250ml) hot water
1 12 ounces (375gr) pound cake frozen or crisp lady finger cookies
Set aside the grated chocolate. Mix the egg yolks and the sugar. Add the
vanilla and beat for approx. 1 minute. Add the cheese one tablespoon at a time
and mix until you get a smooth texture. Refrigerate for 30 minutes. Prepare
whip cream and add to the cheese mixture. Refrigerate for 1 hour. The above
steps can be done 2 days ahead. Mix the instant coffee and hot water. Let rest
until it is at room temperature. Cut the cake in stick like pieces to imitate
the lady finger cookies (or use the real crisp lady finger cookies). Drop cake
pieces or cookies into coffee mixture and cover the bottom of a glass bowl.
Sprinkle half of the grated chocolate then the cream/cheese mixture. Cover with
the remaining cookies or cake pieces and add the rest of the grated chocolate.

INGREDIENTS:
100 ml pure cream
4 tbsp Castor sugar
250g mascarpone
1 tbsp vanilla extract
3 tbsp Masarla (or brandy or Tia Maria) 鈥?
150ml strong coffee or espresso, chilled it before mixing
12 ladyfingers (savoiardi)Chocolate Crunchie 鈥?chopped
Dark chocolate
Cocoa powder
Instruction:
* Whisk mascarpone cheese with vanilla extract, then mix with 50ml coffee and masala, put aside
* Whisk pure cream with sugar
* Mix them all together, put aside
* Dip ladyfinger, one by one QUICKLY in the chilled coffee liquid and take out, it should be soft on the outside, but still dry in the inside.
* Lay the labyfinger into a glass, one by one, break them into two if need be.
* scope in a layer of cream mixture
* Lay another layer of labyfinger, then follow by another layer of cream mixture.
* until the glass 80% full, sprinkle with cocoa powder and dark chochalate.
Done!
NOTE:
Always use chilled coffee to dip in ladyfingers.
You can use singer cream to substitute pure cream.
Do not soak ladyfingers until it鈥檚 totally soaked, or else the tiramisu will taste like soaky cake instead
Tiramisu
3 eggs, separated
1/2 cup plus 1/8 teaspoon granulated sugar
1 tablespoon plus 1 cup espresso
2 tablespoons cognac
1 cup mascarpone cheese
2 tablespoons Dutch process cocoa
About 24 ladyfingers
In a bowl, combine egg yolks, the 1/2 cup sugar, 1 tablespoon espresso and the cognac. Beat the mixture until foamy, 2 to 3 minutes. Add the mascarpone cheese and beat for 3 to 5 minutes, or until smooth.
In a large bowl, combine the egg whites and the 1/8 teaspoon sugar. Beat until the egg whites are stiff. Gently fold the cheese mixture into the whites and set aside.
Pour the 1 cup espresso into a shallow bowl. Dip both sides of each ladyfinger quickly in the espresso.
Arrange a layer of 6 or 7 ladyfingers in the bottom of a serving bowl. Spread about 1/3 of the mascarpone mixture over the ladyfingers. Continue layering, finishing with a mascarpone layer. Sift the cocoa over the top and refrigerate overnight.
Yields 8 servings.

DIRECTIONS
1. In a medium bowl, beat yolks with sugar and vanilla until smooth and light yellow. Fold mascarpone into yolk mixture. Set aside.
2. Dip ladyfingers briefly in coffee and arrange 12 of them in the bottom of an 8x8 inch dish. Spread half the mascarpone mixture over the ladyfingers. Repeat with remaining cookies and mascarpone. Cover and chill 1 hour. Sprinkle with cocoa just before serving.
