Looking for a good but simple Chicken Quesedilla recipe.?

First off, GO TIGERS!!!





Ingredients:


1-2lbs boneless skinless chicken breast, sliced/diced cooked.


1 can Campbell's Nacho Cheese Soup


1 cup Picante Sauce or Fav. Salsa


4-6 Large Flour Tortillas





Directions:


Slice/dice the chicken and cook it through in a skillet over medium heat.


Warm the soup and salsa together in small sauce pan.


Equally distribute the chicken between the tortillas (make sure to keep it on one half of the tortilla) and then spoon the sauce over the chicken.


Fold the tortilla in half and brush water around the edges to seal.


Bake at 350 F for about 15-25 minutes. Top with your fav.Looking for a good but simple Chicken Quesedilla recipe.?

1 (1.27 ounce) packet fajita seasoning


1 tablespoon vegetable oil


2 green bell peppers, chopped


2 red bell peppers, chopped


1 onion, chopped


10 (10 inch) flour tortillas


1 (8 ounce) package shredded Cheddar cheese


1 (8 ounce) package shredded Monterey Jack cheese











DIRECTIONS


Preheat the broiler. Grease a baking sheet.


Toss the chicken with the fajita seasoning, then spread onto the baking sheet. Place under the broiler and cook until the chicken pieces are no longer pink in the center, about 5 minutes.


Preheat oven to 350 degrees F (175 degrees C).


Heat the oil in a large saucepan over medium heat. Stir in the green bell peppers, red bell peppers, onion, and chicken. Cook and stir until the vegetables have softened, about 10 minutes.


Layer half of each tortilla with the chicken and vegetable mixture, then sprinkle with the Cheddar cheese and Monterey Jack. Fold the tortillas in half and Place onto a baking sheet.

Hmm- I would just shred up some cooked chicken (use rotisserie chicken from your grocery store to make it really simple!) and mix it with some taco seasoning and a couple tablespoons of water to moisten. Then, mix in some shredded cheese (your choice but Monterrey jack or cheddar would be yummy). Heat a skillet over medium high with a little olive oil. Place a tortilla on the skillet and add a few spoonfuls of the filling. Place another tortilla on top. Cook over medium or medium high until cheese is melted. Flip and brown on other side. Cut into triangles and serve with sour cream and salsa.
Chicken and Mixed Vegetable Quesadillas with Artichokes, Mushrooms, and Roasted Red Peppers





Cooking spray


2 cooked chicken breast halves


8 (6 to 8-inch) flour tortillas


1/2 cup chopped red onions


1/2 cup sliced mushrooms


1/2 cup sliced roasted red peppers (from water-packed jar)


1/2 cup sliced artichokes (from water-packed can or jar)


1/4 cup shredded Monterey jack or pepper jack cheese, for each quesadilla








Coat a large skillet or griddle with cooking spray. Set pan over medium heat to preheat.


Using a fork, pull chicken meat from bone in shreds.


Arrange tortillas on a flat surface. Top 1 side of each tortilla with an equal amount of chicken, mushrooms, red peppers, and artichokes. Top vegetables with shredded cheese. Fold over tortillas, making a half moon. Place quesadillas in (or on) prepared pan and cook 3 minutes per side, until golden brown and cheese melts.

Layer All ingredients in the flour tortillas and fry in a little butter in a pan until crip %26amp; golden on both sides. Cut into triangles like a pizza and serve with sour cream,salsa, and shredded lettuce for dipping/topping.





THey are really good and simple to make!
I would fry the chicken with olive oil, fajita seasoning, coarse black pepper and grounded peppercorns (easliy found in the spice aisle) and through in some chopped up green peppers and red peppers. When that looks done just put in on top of the tortilla and cheese and throw it in the microwave. I would use a combonation of shredded sharp cheddar and monteray jack. Fold it and spread some guacamole or sour cream on it and have a parthai

Ingredient's: Flour tortilla, Chicken, Cheese.





I would grill the chicken breast will add nice flavor then, cut up into small pieces, then sprinkle your fav cheese on close shell. Grill lightly on both sides..... Way better then taco bell!
