Poach in milk then use the milk to make this sauce.

2T. All-purpose flour.

In a small saucepan over medium heat, melt butter.

In a deep skillet put a little olive oil,1 onion sliced,2 cloves of garlic chopped and some finely cut Italian parsley.
Saute for a few min. and add 1/2 cup good quality red wine,cook for a min.now add 1 cup diced tomato's from a can,salt,pepper and a touch of sugar.
Place your fish in the sauce and continue cooking for 10 min,if you need to add some liquid add a little water,what you want though is a nice thick sauce.

BAKED WHITE FISH
2 lb. any white fish (halibut, cod, sole, etc.)
1/2 c. chopped green onions and tops
1 c. sour cream
1/2 tsp. salt
Dash of dill weed
1/2 c. Parmesan cheese
Place white fish in well buttered baking dish. Combine all above ingredients except cheese and pour over fish. Bake in a preheated oven at 350 degrees for 20 to 25 minutes. Sprinkle cheese over top and turn broiler on just long enough to brown the cheese lightly.
Grab some aluminum foil and tear off however many pieces of fish you will have. Then coat each piece of foil with butter. Place a filet on it and then coat with some chopped oninons and green peppers, salt, pepper, garlic and a pat of butter. Fold it up--center first, edges together and then fold the sides in. Place in 350 degree oven and bake about 10 minutes.
pan fry it with some olive oil
saute some tomatoes, shallots (or red onion), and capers with olive oil. squeeze in some lemon juice and melt in a dab of butter. salt and pepper to taste. pour over the fish and sprinkle on some fresh parsley.

Pat dry the fish fillet after washing. Then season with salt %26amp; pepper. Dredge the fillet with onion soup mix. Spread mayonnaise over it. Bake @ 375 degrees F for 20 - 30 minutes.Yummy!
grill it and put a dollop of butter onit with some fresh herbs - any will do except maybe rosemary- and add some fresh chopped chilli ----yum
the same as that guy but try lightly brushing some oyster sauce %26amp; soya sauce over it then pan frying .
just pan fry it with some garlic, lemon juice, and capers.
