Recipe for simple carrot cake?

nothing complicated just ya'know simple, for my mom.Recipe for simple carrot cake?
CARROT CAKE





1 cup flour


1 1/2 tsp. baking powder


1/2 tsp. cinnamon


1/2 tsp salt


1 1/2 cups grated carrots


1/2 cup chopped pecans


2 eggs


1 cup sugar


3/4 cup vegetable oil


2 tsp. vanilla or rum


Confectioners sugar for topping





CREAM CHEESE ICING:





3 oz package cream cheese, softened


1 tbsp. butter, softened


1 tsp. vanilla








CAKE:





Combine flour, baking powder, salt and cinnamon. In a separate bowl, beat eggs, sugar and oil.


With mixer running on low speed, slowly add the flour mixture.





Blend in vanilla or rum, carrot and pecans.





Pour batter into a well greased 8 x 12 inch pan.





Bake in 325掳F oven for 35 minutes or until a toothpick inserted in center comes out clean.





When cake is cool, spread with cream cheese icing, below.





Note: Chopped peanuts or walnuts may be substituted for pecans.








CREAM CHEESE ICING:





In a small mixing bowl, combine cream cheese, butter and vanilla. Beat at low speed on electric mixer until light. Gradually add sugar, beating until fluffy. If necessary, add milk to thin out to spreading consistency.


If desired, mix in chopped nuts or sprinkle them on top after spreading.Recipe for simple carrot cake?

For this recipe you will need:

Pam non-stick cooking spray

Mixing Carrot Cake


First Step: Mixing Carrot Cake


Mix together until well blended:





2 Cups Sugar





1 Cup Corn Oil





3 Eggs





1 Can Pineapple (15oz)





2 Cups Grated Carrots





2 Cups White Raisins

Pre-heat oven to 350F











Adding Dry Ingredients To Carrot Cake


Second Step: Adding Dry Ingredients


Next mix together on a paper plate:





3 Cups Flour





2 teaspoons Baking Powder





1 teaspoon Salt





1 teaspoon Cinnamon





1 teaspoon Baking Soda





Then add them slowly to your mixture

Third Step: Baking Carrot Cake


Spray your cake pan with cooking spray, make sure you cover all the inside of the cake pan.





Then pour the cake batter into the cake pan and bake in a preheated 350 degree oven for 1 hour.

Ingredients





For the cake:


2 cups all purpose flour


2 cups sugar


2 teaspoons baking soda


1 teaspoon cinnamon


1 teaspoon salt


4 eggs


1 1/2 cups vegetable oil


3 cups grated carrots (appx. one pound)





Icing:


1 (8 oz.) package cream cheese (room temp.)


1 stick of butter (room temp.)


1 box 4x powdered sugar


2 teaspoons pure vanilla extract


Pecans, chopped (for garnish)











Preparation





Begin by heating your oven to 350-F and preparing two 9'; round cake pans by lining the bottom with wax paper, (do not grease or flour).





In a large mixing bowl sift together the flour, sugar, soda, cinnamon and salt.





Add to that the eggs, vegetable oil and grated carrots, mixing until well combined.





Divide batter evenly between the two cake pans and bake for 30 minutes. (When finished baking be sure and let cakes cool completely before frosting, as the icing will easily melt if cake is the slightest bit warm.)





To make icing, place the cream cheese and butter in a medium-sized mixing bowl and cream until both are well incorporated. To that slowly add the powdered sugar in small increments until all gone and then the vanilla. Chill until ready to frost cake.





When frosting cake, if you'd like, add chopped pecans to the middle layer after frosting and also to the top and sides for a beautiful presentation.
