What are some super simple dinner or lunch recipe that you could not live without?

No pork, fish or salad please, and please a little more fancy then PB %26amp; J :)


Looking for lots of different kinds.What are some super simple dinner or lunch recipe that you could not live without?
Chicken breasts cooked on George Foreman grill...brush Italian dressing on both sides of meat...add a baked potato in the microwave or uh...make a salad to go with it...that is my favorite! Or just put on some bread %26amp; make a sandwich.What are some super simple dinner or lunch recipe that you could not live without?
Its really simple but delicious.. thiking about it now I hav't had ti in forever, I should make it soon :) Anyway, Mac n' cheese with chicken in it. You can just make a box of Kraft Mac N Cheese, then you put in a can of white chicken breast. Its really really tasty all mixed up together, belive me!
I like a black bean and corn salad---


Get a big bowl and combine one can drained black beans ( I rinse them), one can drained whole kernel corn, 1/2 chopped red onion, 1/2 chopped green pepper, 1 stick celery chopped, 1 cup cold cooked basmati rice---toss with dressing of 1/4 cup rice wine vinegar, 1/2 cup extra virgin olive oil, 1 clove garlic minced, dried herbs-1/8 tsp each--savory, marjoram, thyme and dill weed or seeds...mix dressing together and toss salad, serve on romaine lettuce...
I bake chicken breasts with potatoes cut in half, seasoned with garlic powder and lemon pepper in a covered glass casserole with water in the bottom. Green beans go well with this, or asparagus.


I buy teriyaki stir fry at Walmarts (frozen section, about $6.00 for large bag with seasoning included), slice either lean beef or chicken, stir fry the meat with seasonings, then cook the veggies in the sauce, served over ';instant'; brown or white rice fixed in the microwave. We like to add soy sauce after cooking-I also add a tiny bit of suger for a sweeter sauce and usually more oil to the pan.


For a quick lunch I fix a large baked potato, with margarine or butter, dried onion flakes, lemon pepper, bacon bits. My daughter likes to add low fat sour cream to hers.

can be served as is...but i prefer to put in ovenproof dish, sprinkle with more cheese, and brown under grill
This is a simple tomato sauce that I use all the time. 1 - 2 cloves of garlic and 1/2 sliced onion or 2 shallots in sauteed in olive oil with salt and pepper. Add 2 cans of diced tomatoes and let simmer for about 10 minutes. Again, season with salt and pepper. You could simply toss some angel hair with this, and top with fresh ripped basil, and parm cheese. You could also add some fresh seafood at the last five minutes before you serve for something more fancy. I know you said no fish, but nothing about seafood. I also add mayo to this and make a aioli, mix this with fresh red pepper diced, diced chicken and put on bread with fresh arugula.





Another thing that I make about 2 times a month is a quiche. This is my basic recipe, but you can add anything to it that is cooked that you like. http://allrecipes.com/Recipe/Swiss-Chees鈥?/a> It's really easy, and good. Easy to reheat and is good in the fridge for about a week. I find that I need to add things to it so it fills my pie pan. I am not a big fan of pork either, but I do like bacon in this. You can use turkey bacon though. I find that sausage makes it a little heavy and greasy for me. Another great addition is a box of diced spinach that you have squeezed all the liquid into.





Another thing that I do often is make lettuce chicken wraps. I can't give you an exact recipe for this, I make it by taste. In a sautee pan I sear up little pieces of diced chicken (generally one good sized breast will do it) with diced at least peppers and onions. If I have on hand I will add diced water chesnuts, diced mini corn, finely diced ginger and garlic, about 1 tsp. each, and at the last minute bean sprouts. Alright now back to the sautee I add a mixture that I have cooked in a separate spot. Basically it's about 2 rounded tablespoons of plum sauce, 1/4 cup soy sauce, and a slurry of cornstarch and chicken stock. I am sure that you could use water, but chicken stock is something that I always have on hand. Add this slowly you don't water the mixture down too much. Get it to the consistency of bbq sauce and then pour into the chicken veggie mixture. Let this simmer until the sauce has reduced into a coating on the mixture, you dont' really want a sauce. Put this into a lettuce leave, top with carrots and crunchy noodles. I know this sounds complicated, but it's not. My key is to cook the chicken first, then make the sauce, then the veggies into the chicken and finally then add the sauce back to the pan. That way the veggies stay crunchy. It doesn't take more than 20 minutes total if you cut at a decent rate.





Another way to think is NYC deli. Get a good bagel, top with cream cheese, lox and red onion. You can also get herbed cream cheese and add sliced turkey breast, lettuce and tomato. Pastrami on rye with swiss and mustard. I like mine warm, so put the meat and cheese in the mic quickly, maybe 45 second, just enough for the cheese to melt, and back on the bread. Knish with cheese and mustard. You can do this with a turkey ruben as well. Heat the turkey and cheese then top with cole slaw on rye. I know it sounds nasty, but it's delish!

Baked chicken.. I usually make this when the leg quarters go on sale.





1 pkg of chicken quarters


1 onion


2 carrots


a pkg of chicken in the bag seasoning fro Mc Cormick (store brand if they have it)


Coconut milk


1 scotch bonnet pepper


Thyme


Italian Seasoning


garlic, fresh is the best chopped very fine





Wash chicken in lime juice and drain.


Place all the chicken pieces in the bag , add the chopped up onion, and carrot. Ad seasoning packet and instead of water use coconut milk, add thyme, Italian seasoning and garlic to taste.


I use a pepper in mine because we like spicy food , but this can be omitted.


Bake for about an hour, according to pkg instructions.





Roasted potato's





You can make these with or with out the skins you choice, I usually use red new potato so I don't have to peel them.





Boil whole potato until almost soft. drain water.


In an oven safe pan, caot the bottom with a non stick spray such as Pam. Put the potatos in, drizzle a generous amount of olive oil over potatos and add chopped parsley, chives and a pinch of rock salt. Bake at the same time as chicken.


If you want your potatoes crispier, cook under the broiler after the chicken is done for about 5- 10 min until desired crispness.





Seve with your choice of Veg.
