My favorite is oven-fried chicken, any part will do. It's great on legs.
Heat the oven to 350 degrees Fahrenheit (175 C)
Line a baking pan with aluminum foil and pour in 1/4 cup (about 60ml) cooking oil. Tilt the pan so the il spreads out evenly.
Mix a cup (roughly 1/4 liter) of flour with a teaspoon or two each of onion powder, garlic powder, salt, pepper, and a tablespoon of paprika. Wet the chicken legs and roll each one in the flour -- or, wet all the chicken legs, put the flour in a plastic bag that won't leak, add the chicken, seal the top, and shake until they're all coated.
Place them on the pan so they're not touching. Bake at 350 for 25 minutes. Remove from oven, turn each leg over so the dry side is down, and return the pan to the oven for another 20-25 minutes at 350. Poke the biggest leg on the thickest part with a knife or fork. The chicken is done when the juices run clear.
If you don't like touching the food you'[re eating, make 4'; (10cm) square of aluminum foil. Center the bottom of a leg on a square, fold the square up around the end of the leg. This gives you a handle so you can pick it up without dirtying your hands -- if you care about that. Folks in some countries do, and I don't know where you live.
Fried Chicken Legs drizzled with Honey and topped with pecans.
Super easy! Salt and pepper chicken legs, roll in flour. Fry submurged in oil until chicken is done and the outside is crispy. When done drain on a paper towel, drizzle 1/4 cup of honey over chicken and top with 1/4 cup of pecans (you could also use almonds). Yum! I sometimes sprinkle my chicken with onion powder and garlic before rolling in flour.

Hey congrats on baking with your mum. So what me and my mum used to do was drizzle the chicken legs with lemon juice, some salt, and a little pepper. Then you bake it in the oven for about 1 hour and 30 mins. After the chicken legs came out my mum would sprinkle them with oregano and serve them on a platter with chopped potatoes! Yum hoped this helped.
