2 cups sugar
2 tablespoons cornstarch
4 tablespoons butter
1 teaspoon salt
1/2 cup corn syrup
1 1/2 cups water
2 teaspoons vanilla extract
1 tablespoon orange, or other flavored extract
8 drops any color food coloring
DIRECTIONS
In a large saucepan, stir together the sugar and cornstarch. Add the butter, salt, corn syrup and water; mix well. Bring to a boil over medium heat, stirring to mix in butter. Heat to 275 degrees F (134 degrees C), or until a small amount of syrup dropped from a spoon forms hard but pliable threads.
Remove from heat, and stir in the vanilla, flavored extract and food coloring. Pour into a greased 8x8 inch baking dish. When cooled enough to handle, remove candy from the pan, and pull until it loses its shine and becomes stiff. Pull into ropes, and use scissors to cut into 1 inch pieces. Melt butter in a saucepan, add sugar, corn syrup, and water, stirring until sugar is dissolved.
Bring to the boiling point and boil without stirring to 160掳F or until it forms a hard ball when dropped into cold water.
Pour onto a marble slab or white agate tray which has been slightly moistened by being wiped over with a piece of damp cheesecloth.
Fold edges over into the center before they have time to get hard; by doing this the candy will be kept soft, but in doing it the candy must be disturbed as little as possible in order to avoid ';sugaring'; (if the candy ';sugars'; then it cannot be pulled to make taffy).
As soon as candy is cool enough to handle, knead it until it becomes firm, add flavorings, then pull it over a hook until it is white in color. If you don't have a hook, two strong people can be used to pull the taffy.
Stretch the taffy into rolls, snip with an oiled scissors into bars or 1 inch pieces and wrap in waxed paper. Store in airtight container in a cool, dry place after allowing to sit for a few days in a place of low humidity.
TAFFY PULL TAFFY
2 c. sugar
1/2 c. water
1/2 c. vinegar
1 tsp. cream of tartar
1 tsp. vanilla
Boil sugar, vinegar, cream of tartar and water to fine thread stage. Remove from fire; add vanilla. Pour onto greased plates and when cool enough to handle, butter hands and pull until satiny and holds shape.
