Just had some citrus marinated chicken tonight. I usually don't like citrus chicken but this one was pretty good.
Ingredients:
The zest and juice of one orange
The zest and juice of one lemon
The zest and juice of one lime
1 garlic clove, minced
1/4 cup vegetable/olive oil
1 tsp. dried thyme
1/2 tsp. cayenne pepper (optional)
Salt
Pepper
Just mix all the ingredients together in a zip-lock bag, throw the chicken in and marinate in the refrigerator for an hour+.Simple Chicken Cutlet Recipes?
You could pan cook them and add stir fry vegetables. I like to cook chicken and make chicken salad with salt and pepper, mayo and celery. I usually make the following with chicken breasts, but I guess it could work with cutlets if you put two a piece in. Grease a baking dish, put chipped beef slices in it. Microwave bacon until it's almost done. Take the cutlets and wrap a bacon slice or two around it and put it on top of the chipped beef. Mix together a can of mushroom soup and 8 ounces of sour cream together in a bowl and pour it on top. Bake at 275 for two and a half hours. This is really rich and the sauce goes well with noodles. It's called Party Chicken, but I don't know why. Another easy one - grease a baking dish, put a cup of raw rice in it, space the chicken over the rice, mix a cup of water with cream of mushroom soup, cream of chicken soup, or golden mushroom soup, and pour it over the chicken, dot it with butter or margarine and bake at 350 for an hour. All my bfs love this one.
CHICKEN CUTLETS
chicken cutlets
2 or 3 eggs
1-2 tablespoons fresh parsley, chopped
bread crumbs
nutmeg
salt and pepper
oil
Wash chicken cutlets and pat dry with a paper towel Crack the eggs and mix them in a bowl with a whisk. Add 1/2 teaspoon of nutmeg, parsley and a pinch of salt and pepper to the egg mixture.
Dip the chicken into the egg mixture. On a separate shallow dish, dip chicken into the bread crumbs to coat.
Place in a pan with some oil on a lower medium heat. Fry on both sides, only enough to coat the bread crumbs with oil so they will stick to the chicken.
Then place the chicken on a cookie sheet and bake 350掳F for a good 40 minutes.
Serve with any kind of potatoes or vegetables. My family just loves them!

Oh yes!! I cook them like milinesa. I take a cutlet, season it with Adobo, Creole seasoning and seasoned Italian bread crumbs. You can use an egg to make the crumbs stick if you prefer. Then after they are all coated, let them sit in the crumbs while you prepare a pan with olive oil and butter to fry them in. When the oil is bubbly, add your chicken and sautee untill no longer pink. They're deelish-ous;)
I needed a new idea recently too and found a new favorite!
bread each cutlet in flour, egg, and panco in that order.
fry until safely cooked
then serve with fresh greens and top chicken with a pineapple relish, or a cranberry/kumquat relish. (look at Bon Appetite web site for relishes.
stiry fry:
Gheat up a wok or fying pan
add some oil. season the chicken
throw in mix with onions, mushrooms, babycorn and vermicelli
Try chicken parmigiana........
Put them in the oven with some sauce,mozzarella,and grated parmigiano cheese.
