1 tsp vanilla extract

Line an 8 inch square pan with foil

Combine evaporated milk, butter and salt in a medium heavy saucepan. Bring to a full rolling boil over medium heat, stirring constantly. Boil, stirring constantly for 4 to 5 minutes. Remove from heat.

Stir in marshmallows, chocolate chips, nuts and vanilla. Stir for 1 minute or until marshmallows and chips are melted. Pour into prepared pan. Refrigerate for 2 hours, or until firm.

Lift from pan, remove foil and cut into squares.

Here is another fool proof fudge.

Foolproof Dark Fudge

3 Cups semisweet chocolate chips

1 can (14 ounce size) Sweetened condensed milk. NOT evaporated milk.

1/2 to 1 Cup chopped nuts

2 tsp vanilla extract

Line an 8 or 9 inch square pan with foil. Butter foil, set aside.

In a heavy saucepan over low heat, melt chocolate chips with the sweetened condensed milk. Remove from heat; stir in nuts and vanilla. Spread evenly in pan.

Chill for 2 hours or until firm. Remove fudge from pan. Peel off foil and cut into squares.

Both are good. sometimes I swirl a bit of peanut butter into the fudge.

This is really great fudge, but it is white chocolate, and a little different...

Scotch Whiskey Fudge

Ingredients

*Notes: This fudge sets quickly so be ready to press it into the pan fast. Also keep in mind this is a no cook recipe so the whiskey may be strong for some

1. 1 12 ounce package white chocolate chips

2. 1 cup of your favorite Scotch whiskey

3. 2 (1 lb) boxes powdered sugar

4. 1 cup chopped pecans or chopped walnuts

Grease or butter a 9x13 inch pan. Melt the chocolate in the microwave. In a large bowl, mix the Scotch and powdered sugar. Add the melted chocolate, stir, then stir in the nuts. Put into the 9x13 pan and cut when just set but still a little warm. Store covered.

Here is another good one, this is from Dream Fudge of Colorado:

Ingredients

2 (11 1/2-ounce) bags Ghirardelli milk chocolate chips

8 ounces cream cheese

1/2 cup chopped walnuts

Instructions

Butter an 8-inch square pan. Melt the chocolate over simmering water in a double boiler. (It can also be melted on a very low microwave setting. If using this technique, be sure to stir the chips every minute to prevent burning.) Add the cream cheese to the melted chips, and stir. The warm chips will soften the cream cheese and make it easy to form a smooth texture. Stir in the walnuts. Spoon into the prepared pan, and let it set until firm.

If you want to go REALLY easy, try this microwave 5-minute fudge recipe:

Preparation Time: 2 min

Cooking Time: 3 min

Ingredients

* 1 pound powdered sugar

* 1/2 cup cocoa

* 1/4 to 1/2 cup milk

* 1 stick margarine

* 1/2 teaspoon vanilla

Instructions

1. Mix sugar and coca together thoroughly in large microwavable bowl.

2. Pour milk in sugar mixture but do not mix. Set the stick of margarine right on top of the mixture.

3. Microwave on high for 2 1/2 minutes.

4. After the mixture comes out of the microwave, mix well and add vanilla.

5. If it seems to dry, add a little extra milk. If you add too much milk and it gets too runny then you can use the mixture on top of ice cream.

6. At this point you can add nuts or whatever else you like in your fudge. Put the fudge out on a plate that is covered with aluminum foil.

7. Put in the refrigerator for 20-30 minutes. It will solidify pretty quickly.
