I'm making a grocery list and a menu for this weeks dinner. I need very cheap and simple/easy recipes to cook for my family. I will choose best answer. =]
Also, it would be great if the recipes were figure friendly, as well. =D
I love to use ground beef and boneless chicken.

Easiest recipe ever- and cheap. Boneless chicken breast + a can of diced tomatoes (you choose if they are plain or the special ones) plus a splash of olive oil. Pour just a little bit of olive oil in large skillet, followed by the chicken. Medium heat, just slightly sear the chicken on both sides, then add the can of tomatoes (you can add a touch of red wine if you want), cook both sides for around 15 to 20 minutes covered moving the chicken around slightly now and again. Once the chicken temps out at 165 degrees, you're done. For an extra touch, when the 2nd side is almost done, put a piece of cheese on top to melt over the chicken. Serve with the tomatoes on top or on the side with veggies or chips.In need of simple and cheap dinner recipes. Please help?

Baked Steak
3 lbs ground Beef
3 cans brown gravy
2 cans golden mushroom soup or cream of mushroom soup
Form big thick patties and place in bake pan. Bake at 350 for 20 minutes. Remove from oven, Mix gravy and soup Pour over meat return to oven and bake another 20 minutes.
I serve with mash potatoes and a veggie
Chicken Bake
3 boneless chicken breast
6 cans mixed veggies
3 cans chicken gravy
1 large box of chicken stove top stuffing
Boil chicken until done, cut or shred into small pieces, mix in gravy and veggies. Pour into bake dish, Make stuffing as directed on box. Spoon over top of chicken mixture. Bake at 350 for 30 minutes.
This is almost like a chicken pot pie
Try this recipe! It is very good, easy and all in one pan, so clean up is a breeze!
Shown below is the pork chop recipe as it appeared in Hunt's Tomato Sauce ad in he early '70's.
Note that it makes a good deal of rice and can easily make 6 servings if you add a couple of chops (as I do).
Also, the original recipe called for canned peas but I use frozen peas 10 ounces (or more).
SKILLET CHOPS %26amp; RICE
4 Large Chops (pork, lamb or veal), 1/2 inch thick
Salt, Pepper (I use seasoned salt here)
1 Medium Onion, chopped
1/2 Cup sliced celery
2 Tablespoons Wesson (or other vegetable oil)
2 Tablespoons sugar
1-1/2 Teaspoons salt
1 Teaspoon dry mustard
2 (8 oz.) Cans Hunt's Tomato Sauce
1 Cup long grain rice
1 (10 oz or +) Package frozen peas, thawed
Sprinkle chops with salt %26amp; pepper; brown both sides in hot oil in large skillet. Remove chops.
In same skillet, saute onion %26amp; celery until golden. Add water, sugar, seasonings and 1 can tomato sauce; bring to a boil.
Stir in rice, place chops in rice mixture; cover tightly and simmer 30 minutes or until chops are almost done.
Add peas and pour on remaining can of tomato sauce. Replace cover and cook 15 minutes longer.
Serves 4 (or 6 if you do it my way)
MEXICAN BEEF TART
2 cans Refrigerated biscuits (or your fav homemade)
1 lb Hamburger, cooked and drained
1 small Onion, chopped
1 medium Green pepper, chopped
16 oz Salsa, your choice of heat
2 cups Shredded cheese of your choice
Sour cream and scallions as garnish if desired
1. Separate biscuits and cut each in half
2. Place into greased 9x13 pan
3. Mix hamburger, onion, green pepper and salsa
4. Pour over biscuits
5. Bake at 350 for 25 minutes
6. Top with cheese, return to oven for 10 minutes
7. Serve with sour cream and scallions as garnish
Bake a big potato for everyone (they're only about 100 calories). When they're soft, ';fluff'; them up and pour some cheap canned chili on top (you can even get chicken or vegetarian chili); top with shredded lettuce %26amp; cut up tomatoes ...
BBQ hamburgers with lots of lettuce, tomatoes %26amp; onions (and sliced avocado) are always good, filling %26amp; cheap
Taco Salad

Fry the ground beef, drain off fat, return to pot....add diced onion,
drain the can of kidney beans under water..then add to pot of ground beef and onions, add the large can of tomatoes, 3 tbsp. chlli powder, salt and pepper......stir, bring to boil, put lid on and simmer
You can eat it alone or add rice.....to make a hearty healthy filling cheap meal*

cheese lovers Mini Meatloaves
1 pouch onion soup mix
2 eggs beaten
1/2 cup ketchup
1/2 cup fine bread crumbs
2 lbs. lean ground beef
4 oz cheddar or mozzarella cheese
Preheat oven to 350F..
In large bowl, blend together the soup mix, eggs, ketchup and bread crumbs. Stir in the ground beef and mix well
Divide the beef in half
Take one portion of the beef and divide it equally between 8 large muffin tins.
Push a 3/4 inch cube of cheese into the centre of each portion of beef.
Take the remainin half of the beef mixture and cover each beef filled muffin tin., making sure to seal the edges well.
Bake 25min or until cooked with internal temperature of 158F (70C) Drain well and serve

Rosemary Dijon Grilled Chicken
1/2 cup real mayonnaise
1/4 cup dijon mustard
2 tbsp. lemon juice
1 tbsp. finely chopped fresh rosemary or 2 tsp.crumbled dried.
2 garlic cloves minced
6 skinless chicken breasts boneless
In large bowl, combine the mayo, mustard, lemon juice, rosemary and garlic. Cut several shallow slashes into each chicken breast. Place the chicken into the marinade and turn to coat. Marinate in fridge at least 30min or overnight.
Preheat the BBQ to medium, Grill the chicken turning occasionally until cooked through, bout 6min. per side.....
Serves 6
