1 small pack digestive biscuits
100g butter
275ml double cream
170g full fat cream cheese
100g icing sugar
1 lemon
1 lime
decorations if you want
place the biscuits in a bowl and using the end of a rolling pin crush them into a fine crumb.
melt the butter in a pan and mix thoroughly with the biscuit crumbs, then place at the bottom of the cheesecake dish, push down and even out. place in the fridge to chill.
pour the cream into a large bowl and whisk until soft peaks
in a small mixing bowl, soften the cream cheese and gradually sift in the icing sugar, mixing continuously.
grate the rind of the lemon and lime and mix into the cream cheese and icing sugar.
cut the lemon and lime in half and juice, use 1 tbsp of this juice in the cheese mixture
fold the whipped cream into the cheese mixture and spread this on top of the biscuit base and decorate. then chill.
if you which to use other fruit such as berries, blend them into a pulp and then add to the cream cheese and icing sugar instead of the lemon and lime.Has anyone got a simple cheesecake recipe?

Mary Foley's Cheesecake
1 pkg. (sleeve) graham crackers, crushed
3 tbsp. butter, melted
1 tbsp. sugar
24 oz. cream cheese, softened
1 c. white sugar
5 eggs
1 陆 tsp. vanilla
1 陆 pt. sour cream
陆 c. white sugar
1 陆 tsp. Vanilla
Mix cracker crumbs, butter and 1 tbsp. sugar together and spread into 10'; spring form pan. Blend together cream cheese, sugar, eggs (1 at a time), and vanilla using hand mixer then pour over crust. While cake is baking, combine sour cream, remaining sugar and vanilla. Pour over hot cheese cake evenly. Put back into oven for 5 minutes. Refrigerate for 24 hours before serving.
Buy a cake and stick a slab of cheese on top, et voila! Quick and easy.
I make the one on the back of the phila cream cheese box, but put vanilla wafers in cup cake tins and pour the batter into them... put choc chips or top with fruit...it is soooo gooood and easy! Enjoy

INGREDIENTS
2 pounds cream cheese
3/4 cup white sugar
2 eggs
1 teaspoon vanilla extract
2 tablespoons cornstarch
1 cup sour cream
1 1/2 cups graham cracker crumbs
6 tablespoons melted butter
1/4 cup white sugar
DIRECTIONS
Preheat oven to 400 degrees F (205 degrees C).
Mix graham cracker crumbs, melted butter, and 1/4 cup sugar together. Press mixture onto the bottom of one 9 or 10 inch springform pan. Place in freezer for 10 minutes.
Cream 3/4 cup of the sugar and cream cheese until smooth. Beat in eggs, vanilla, and cornstarch until just mixed. Stir in sour cream until blended. Pour into prepared crust.
Bake at 400 degrees F (205 degrees C) for 45 minutes. Turn oven off and leave cake in oven with the door ajar for 3 hours. Serve with your favorite topping.
look on the back of a box of (kraft's) philedelphia cream cheese, there's a simple recipe on there. my sister loved that recipe, and she couldn't boil a hot dog without it going up in smoke. if not that, try www.recipezaar.com and i'm sure you'll be in PLENTY of luck there. the site is free and plentiful! you can also go to www.Kraft.com
Easiest recipe I know:
250g biscuits. Use whichever you want, my favs are Hobnobs.
50g butter
8oz Cream Cheese (Phillidelphia cheese works best)
4oz Butter
4oz sifted icing sugar
Vanilla essence
tsp lemon or lime juice
Crush biscuits well (Easier to use food processor)
Melt butter and mix with buscuit crumbs.
Press down well into a dish and put in fridge
Mix butter and cream cheese (i use processor again)
Add the juice and / or couple drop of vanilla essence.
Pour on top of set biscuits.
Chill until set then decorate with whatever. I use mandarin segments and a packet of quick jel stuff, or squirty cream and after eights. Or you just eat without topping.

Crushed digestive biscuits and melted butter for the base, marscaponi and double cream mixed with some icing sugar on top of the base, then whatever canned fruit you fancy. Easy ! ! !
