Simple recipe for beef goulash?

Hearty Goulash Soup





5 slices bacon, chopped


3 pounds boneless chuck, trimmed and cut into 1/2-inch cubes


2 tablespoons vegetable oil


4 medium onions (about 1 1/2 pounds), chopped fine


3 garlic cloves, minced


3 tablespoons paprika


1 1/2 teaspoons caraway seeds


1/3 cup all-purpose flour


1/4 cup red-wine vinegar


1/4 cup tomato paste


5 cups beef broth


5 cups water


1/2 teaspoon salt


2 red bell peppers, chopped fine


4 large russet (baking) potatoes (about 2 1/2 pounds)





In an 8-quart heavy kettle cook bacon over moderate heat, stirring, until crisp and transfer with a slotted spoon to a large bowl. In fat remaining in kettle brown chuck in small batches over high heat, transferring it as browned with slotted spoon to bowl.





Reduce heat to moderate and add oil. Add onions and garlic and cook, stirring, until golden. Stir in paprika, caraway seeds, and flour and cook, stirring, 2 minutes. Whisk in vinegar and tomato paste and cook, whisking, 1 minute. (Mixture will be very thick.) Stir in broth, water, salt, bell peppers, bacon, and chuck and bring to a boil, stirring. Simmer soup, covered, stirring occasionally, 45 minutes.





Peel potatoes and cut into 1/2-inch pieces. Add potatoes to soup and simmer, covered, occasionally until tender, about 30 minutes. Season soup with salt and pepper. Soup may be made 3 days ahead and cooled, uncovered, before chilling, covered. Reheat soup, thinning with water if desired.

Brown a lb of hamburger.


Dice an onion and add to hamburger when it's about brown.


Add a can of stewed tomatoes.


Separately cook about a half package of macaroni in a kettle of water according to directions on package. Drain and add to other ingredients. Sometimes I add catsup according to taste. Add salt or spice as you like. Let it simmer on low heat about 20 minutes . Sometimes I add a little liquid while it simmers. Doesn't take much cooking . 1 package (8-oz.) noodles


3 tablespoons vegetable oil


1 pound round steak, diced


3 onions, peeled and chopped


1 teaspoon paprika


1/2 teaspoon salt


1/2 teaspoon garlic salt


1/4 teaspoon ground black pepper


1/4 teaspoon sugar


2 cups hot water


1 tablespoon flour


1/4 cup cold water


1/2 cup whipping cream





Prepare noodles according to package directions; drain.





Heat oil in a skillet. Add steak and brown well, approximately 10 minutes.





Stir in onions and cook until soft. Sprinkle with paprika, salt, garlic salt, pepper and sugar, blend thoroughly. Pour in hot water; cover, and simmer gently for about 1-1/2 hours.





Blend flour with cold water until smooth. Stir into the meat mixture, and cook until the sauce is thick. Remove from the heat and stir in cream.





Serve over prepared noodles.
1 lb of hamburger


1 can of rotel


3-4 cups of noodles.





Cook hamburger and noodles combine with rotel.

Crockpot Simple Beef Goulash:

6 servings





2 lbs beef brisket, cross rib or short rib pot roast, cut in 1 inch cubes or beef stew meat


1 packet onion soup mix


2 tablespoons paprika


1/4 teaspoon caraway seeds


1/4 cup quick-cooking tapioca


1 (10 ounce) can whole mushrooms (do NOT drain)


8 cups vegetables, cut in small chunks (carrots, potatoes, rutabaga or turnip, parsnip and or green pepper)





1. Place ingredients plus 1 1/2 cups water in 4 quart crockpot.


2. Stir, cover and cook on high for 5 to 6 hours (or on low for 10 to 12 hours).


3. Serve goulash with dumplings or over hot cooked noodles or rice.


4. If desired, omit tapioca and mix 1/4 cup cornstarch or flour with 1/4 cup water to make a paste.


5. Turn the heat to high 15 minutes before serving and stir in the paste.


6. Cook until it boils and thickens.
Ingredients:


2 pounds Beef -- cubed


3 tablespoons Oil


1 cup Mushrooms -- sliced


1 Small onion -- chopped


1 can Tomato soup


1/4 cup Water


1 Bay leaf


1/2 teaspoon Salt


1/4 teaspoon Pepper


1 teaspoon Paprika


1/4 pint Dairy sour cream








Directions:





Heat oil in skillet and brown meat on all sides. Place meat in crockpot and saute mushrooms and onion a few minutes in a skillet.





To the crockpot, add all remaining ingredients except sour cream and onions. Pour mixture over meat and stir together. Cook for 7-9 hours. At serving time, spoon on sour cream and serve with noodles or rice.
