Some simple vegetarian recipes!?

Hello. Can some of you guys help me out with some simple vegetarian recipes you like? =] I dont eat meat bc I dont like the taste of it so no meat substitutes..





But i don't eat pasta or rice simply bc i feel bloated even after eating a tiny portion of it, also I don't eat eggs straight.. Idk what its called if a croissant or something has eggs in the ingredients ill eat it, but not hard boiled or scrambled eggs.





Please no pb%26amp;j sandwiches also!





Sorry to sound to picky but maybe like some soups? Im new at this and still trying to find some stuff to eat =]Some simple vegetarian recipes!?
I highly recommend a series of cookbooks by Sarah Kramer, as well as maybe checking the library for vegan/vegetarian cook books. Google is also an excellent source of recipes!





Miso is a good soup, though somewhat of an acquired taste. I highly recommend minestrone;





1 potato, cubed


1/2 onion, chopped to taste(I generally have mine practically mush)


2-3 carrots, chopped in circles


1-2 stalks of celery, chopped finely





sautee all, giving a few minutes between adding each vegetable, then add 8 cups no-chicken broth or bouillon and boil about half an hour. If desired, add pre-cooked beans or a couple cups of arborio rice and cook for a few minutes.

TRY MY MOUSAKA...MY FAMILY LOVES IT....


FOR TOMATO SAUCE: 4 OR FIVE TOMATOES...1 OR 2 ONIONS...ONE WHOLE GARLIC...SALT AND RED CHILLIES FOR FLAVOUR. LIQUIDISE ALL THE ABOVE AND SET TO BOIL UNTIL THICKENED.( I NORMALLY PREPARE THIS IN BULK AND KEEP IN FREEZER. YOU CAN USE THIS FOR PASTA, PIZZA, ENCHILADA...PRETTY MUCH EVERYWHERE.)


FOR MOUSAKA: SLICE POTATOES ABOUT 1CM THICK IN ROUND SHAPES AND FRY IN OIL LIKE FRENCH FRIES...SET ASIDE. SLICE BRINJALS IN THE SAME MANNER AND SET ASIDE. IN A POT HEAT A LITTLE OIL AND ADD SOME FROZEN VEGIES WITH SALT AND CHILLIES TO TASTE. ADD A LITTLE WATER AND COOK SLIGHTLY.+- 5MIN. ADD ABOUT A CUP OF TOMATO SAUCE.


IN A BAKING DISH, LINE WITH SOME TOMATO SAUCE. ADD A LAYER OF BRINJAL.PLACE POTATO OVER BRINJAL. ADD MIX VEG MIXTURE ON TOP OF POTATO. MAKE SOME WHITE SAUCE TO COVER THE VEG. SPRINKLE SOME CHEESE AND BAKE FOR +- 15MIN ON 180'C.
